Bar Manager: Port of Leith Distillery Bar

Salary: £33,000

Start Date: September 2026

Full Time: 40 hours over 5 days per week

THE ROLE

Join our remarkable team at Scotland's first vertical distillery, located in the heart of Edinburgh's historic whisky district. In our exceptional building, boasting breathtaking views of the Firth of Forth, Leith, and Edinburgh, we have crafted an unparalleled tourism and hospitality experience. At the Port of Leith Distillery Bar, expect to find well-crafted cocktails, a thoughtfully curated food menu, a diverse portfolio of events, and an impressive new-wave whisky collection.

You will play a key role in creating a unique and exciting experience for our customers by managing the operations of our double-height bar. As the Bar Manager you’ll have the opportunity to execute a world-class beverage program and lead a skilled team to create a welcoming atmosphere for our customers. Working closely with the Hospitality Management team across the business, you will play a pivotal role as our company evolves. WHAT YOU WILL DO

  • Be responsible for the beverage operation at the Port of Leith Distillery Bar.

  • Execute the beverage offering and work with the wider team to adapt the beverage lists to meet our customer’s expectations.

  • Line-manage our fabulous Bar Team, and be their go-to person for all of their workplace needs.

  • Be responsible for managing shifts to ensure smooth daily operations.

  • Create a welcoming and lively atmosphere that encourages customers to return and spread the word.

  • Build relationships with our customers and engage with them to ensure they feel welcomed and valued.

  • Be responsible for developing the Bar Team to become local heroes.

  • Work on projects relating the growth and success of Distillery Bar e.g. recruitment, promotions.

  • Be financially efficient in relation to the bar’s budget and revenue maximisation.

  • Work with the wider team to ensure the bar integrates smoothly with the rest of the distillery business including private events and our other sites.

  • Conduct regular tastings and training sessions to keep the team engaged and excited about the bar.

  • Ensure the bar is always clean, organised and stocked with necessary supplies.

  • Maintain our standards of hygiene and sanitation along with licensing and safety processes.

WHAT YOU WILL HAVE

  • Creativity, passion and positivity.

  • A keen eye for detail with excellent organisational skills.

  • Previous experience working in high-end cocktail/whisky bars with a special emphasis on people/team management.

  • Exceptional knowledge of cocktail specifications and drinks trends with preference to whisky.

  • Experience of managing a venue, rotas and inventory.

  • Great experience in delivering 5* Customer Service - anticipating our customer’s needs is a must.

  • Natural leadership skills with the ability to not only lead a team but also develop their team to assist with career progression.

  • Verbal and written communication proficiency with the ability to tailor their approach to all customer profiles.

  • Proficient with the use of IT systems (EPOS, Payroll, General Office and Communication, Booking Systems, Inventory Management, Training).

  • Be a SPLH (Personal Licence) holder
